Recipe for trachanosoupa with mushrooms.

What we need:

250 gr trachana
500 gr mushrooms
1 large onion, grated
1 water glass of tomato juice
1 small glass of brandy wine
1 water glass milk
1 cup grated Parmesan

How do we do it:

In a large pot, heat a little olive oil and lightly sauté onion.
Cut into slices mushrooms, add the onion and sauté.
Add the brandy. When the alcohol evaporates, add the tomato puree and about 1 liter of water and add salt and pepper.
Cook for 15-20 minutes on medium heat.
Add the frumenty and continue cooking for 15 minutes, stirring often to not catch trachanas.
When the soup boils, add the milk, bring to a boil and katefazoume from heat.
Add the Parmesan, stir the soup and serve.
Eaten warm.
